Cilantro / corriander pesto

" Believe it and it will happen"
Hello my lovely readers I am back with another post. This is going to be healthy food recipe which I tried and loved it. It is so easy to make and requires less ingredients. So lets get started.

Ingredients
Cilantro/ corriander leaves - a bunch
garlic - 2 cloves
ginger- 2 tsp
lime juice- 2 tsp
olive oil - 5 tbp or depends on how creamy you need the pesto
chilli flasks- 2 tsp
peanuts- 1/4 cup
salt- to taste

Method
- In a food processor add peanuts, garlic, ginger and chilli flasks and blend it together till the peanuts gets coarse.
- Add lime juice , salt, olive oil and cilantro in the processor and blend together.
- Add olive oil if required. Regularly use a spoon to stir around the blender to make use everything is blending together.
- Taste for salt and heat.
- Transfer into a bowl and use it on the spaghetti. Delicious cilantro pesto is ready to serve.
- Serve it with roasted vegetables or mashed sweet potatoes.

My delivery

" Try to be a rainbow in someone's cloud"

Hi everyone I am back after a long gap. I have been super busy with work and mild issues in my pregnancy. And finally free to share my delivery story. I was 39 weeks pregnant and was waiting for the expected delivery date but I didn't know God had other plans. It was 39 weeks and 3 days, I could remember, it was 1 am in night I went to the bathroom. Usually I could not control my bladder, this time it was worst I couldn't even get to the toilet I thought I peed on my pants. But it was not like peeing its like gushing of water which you don't have any control. I tried controlling but no use. The amount of water was more than a pee. Then I went again and again to the bathroom and large amount of water was gushing out of me. At this stage I realized that my water has broken. Then I called the hospital and went in to check whether I had any contractions. I was having mild contraction and they asked me to wait for another day until they induced me into labor to prevent infection. 
I waited 30 hrs still contractions were not close so they induced me with drugs for contractions. Then I started having contraction and my labor went for 4 hrs where I used nitrous gas as pain relief. And finally gave birth to my baby boy with 2nd degree tear.  I became a mother after lot of pain which I did not imagine. One thing is for sure all your pain will disappear just like that when you see your baby for the first time. 
Then 5 days in hospital I was sent home. Now I am 3 months postpartum and enjoying my motherhood. Its was hard for the first month with sleep deprivation , knowing nothing about baby and tired. But once you pass the first month you will get used to everything. Motherhood is such a blessing. Both me and my son are doing good.

PREGNANCY UPDATE 01

" Everything happens for a reason"

Hi everyone
As you all know from my previous post that I am pregnant.This is my first update on my pregnancy. I am currently 18 weeks pregnant and wanted to share my experience during these past weeks. 

FIRST TRIMESTER:

I think I am the lucky few not to experience morning sickness. I thank God for giving me the gift. I did not not have any symptoms during my first trimester. Thats the reason I found out I was pregnant when I was 9 weeks pregnant. 

SECOND TRIMESTER:

I had few symptoms during my second term. The symptoms I had are
1. Feeling tired all the time
2. Feeling hungry very often
3. Feel sleepy all the time
4. Started eating fried chicken a lot especially KFC
5. I feel sickness during the night after having dinner

12 week scan meet "Oli" 

All these symptoms are natural and can be dealt easily. I usually eat short portion every 2hrs to cope with my hunger. I liked to sleep all the time and my sweet hubby let me to do it. Sometimes I have indigestion during night time and feel sick when I lie down. So I have to sit for a while to settle the sickness. My stomach started growing a bit and my weight increased by 2kg which is required.  

SUPPLEMENTS USED:

Folic acid: I have been taking folic acid 6 months prior to conception.


APPLICATIONS USED:

I have an iphone and I use the pregnancy application to keep in track with the development. The applications are

4. Oh baby!

Weight 
Before: 55Kg
After first trimester: 56Kg
After second trimester: 58kg

Great Announcement !!!!

Hi my lovely readers

I am so happy to announce that 
  "I AM PREGNANT"


It has been 9 weeks that I found out I was pregnant. This is going to be a weekly update of my pregnancy. 
On 28.07.14 I took a test in the morning and it came positive. I was so happy and was waiting to tell my husband. I made several notes written by  me that describe my hubby and had the pregnancy stripes in an envelope. Finally he came in the evening  and once I handed over the envelope he did not have a clue what the stripes meant. Then I told him I was pregnant and he was so happy. 
I did not have any symptoms till 9 weeks. I went for the scan at 9 weeks and saw my baby who was so cute and small. I am so thankful to God for blessing with the baby.

My hubby's birthday

Winter snacks pakoda

Things needed:
Besan flour
Onions
Peanut
Chillies
Ginger
Garlic
Coriander
Curry leaves
Oil for frying

Just follow the pics
Cut all the ingredients into small pieces.

                  

Sieve the besan flour.
      
                           
Add curry leaves.

                     


                 

Now add besan flour to the mixture.

                     

                    
Heat 3 tablespoon of cooking oil and add to the mixture this will cook the flour halfway. Be careful with hot oil.

                       
Add peanuts and mix well. Then heat oil in a pan and just add the mixture into it as small lumps. Take it out when the color changes to golden yellow. 



There you have it a crispy treat for winter.
